automated environmental systems maintain an aseptic environment
throughout the plant. Clean-in-place systems enable us to safely
switch from one sauce type to another in minutes.
 | Our computer-controlled cookers prepare sauces in precise
batches. Recipes are mixed accurately batch after batch assuring
consistent taste and texture, regardless of the batch size. Kettle
processing means we prepare our sauce more like you would in your
own kitchen. We slow-cook our sauces in smaller batches to get the
very best flavor. Kettle processing also means we can prepare all
your sauces including complex, smaller-volume sauces. |
After cooking, sauces are sealed in a variety of jar configurations
or Clear-Pak bags. They are quick-cooled to preserve freshness and flavor
and shipped. Batch processing enables Food Service Specialties to prepare
customer sauces several times throughout the year - so the sauce you serve
in spring tastes just as good as the sauce you served in the fall.
